Picked up some fresh duck eggs at the market this past weekend. They are slightly larger than the chicken variety with sizable thick yolks. They can be used in any egg recipe and seem to enhance the richness of the dish. While I still love a fresh chicken egg, it was rewarding to try something new while supporting the local market.
